Ingredients:
60g cauliflower
220g catfish
40g red onion
15g shredded coconut
80g tomatoes
Drizzle of olive oil
Pinch of mustard seeds
Pinch of turmeric
10g lemon juice (optional)
Pinch of ginger (optional)
Pinch of garlic (optional)
Pinch of salt (optional)
Pinch of chili powder (optional)
10g lime (optional)
Instructions:
1. Wash and thoroughly dry cauliflower, then remove all greens. Either cut the cauliflower into large chunks and use box grater's medium-sized holes to grate the cauliflower into "rice" or cut it into small pieces and use food processor's grater attachment to grate the cauliflower into "rice".
2. In a dry pan, add the cauliflower rice, sauté for 2-3 minutes until the rice is cooked well and tender. Set aside.
3. Cut the fish into 5 cm (2 inch) cubes and apply lemon juice.
4. In a food processor purée onion, tomatoes, coconut, garlic and ginger to a fine paste.
5. Heat olive oil in a pan. Add mustard seeds and once they start to splutter carefully add the onion and tomato purée. Add ground turmeric, chili powder and cook on medium heat for 5 minutes until the oil starts to separate stirring occasionally.
6. Drain any water / lemon juice from the fish and add the fish to the pan. Add a small pinch of salt, a couple tablespoons of water and gently mix together the sauce and the fish. Cook covered on medium heat for about 5 mins. Add more water if needed to bring the sauce to your desired consistency.
7. Serve with cauliflower rice and lime wedges.
