  • 120g asparagus

  • 50g mozzarella

  • 30g semi-hard cheese (30%)

  • Drizzle of olive oil

  • Pinch of salt (optional)

  • Pinch of black pepper (optional)

  • Pinch of Italian seasoning (optional)

  • 30g green leaf lettuce (optional)


Instructions:


1. Preheat the oven to 200°C. Line a baking sheet with foil (greased) or parchment paper.

2. Toss the asparagus with little olive oil, pinch of salt and black pepper, and a teaspoon of Italian seasoning. Arrange in a single layer on the lined baking sheet.

4. Meanwhile, prepare beef as you like! You can cook beef on pan using little olive oil and seasoning of choice.

5. Mix together the Mozzarella with semi-hard cheese of choice, then sprinkle over the asparagus. Top with the remaining teaspoon Italian seasoning.

6. Return to the oven for another 6-8 minutes, until the cheese is melted and golden.
