Ingredients:
120g chicken
120g cauliflower
50g carrots
100g celery
Drizzle of olive oil
Stock cube (optional)
20g onions (optional)
5g garlic (optional)
10g ginger (optional)
Pinch of salt (optional)

Instructions:
1. Heat olive oil in a pot on medium heat.
2. Add chopped garlic and onion and a couple of 2cm thick ginger pieces. Cook until onions turn golden. Onion, garlic and ingver will improve the taste of the soup, but they are not mandatory.
3. In the meantime use a blender or a knife to chop cauliflower until it resembles rice.
4. Add cauliflower to the pot and cook on medium heat until browned a little. About 6 - 8 minutes.
5. Add grated carrot, chopped celery and about 2 - 3 cups of water. If you want, you can also add a small piece of bouillon cube. Heat until water starts to boil.
6. Add chicken fillet to the soup and boil for 15 minutes. Remove from the pot and put aside. Continue to boil soup without chicken for another 3 - 5 minutes.
7. When the chicken fillet has cooled a little, flake it into small pieces using a fork.
8. Remove ginger from the soup, and add chicken pieces and a pinch of salt and pepper. Stir and serve with herbs of choice.
