Celery root pizza recipe:

Ingredients:
150g celery root
40g mushrooms
10g butter
15g hazelnuts
20g spinach
40g feta cheese
Drizzle of olive oil
Pinch of salt (optional)
Pinch of black pepper (optional)
30g red onion (optional)
Instructions:
1. Wash and slice celery root into 1,5cm thick slices. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine.
2. Place celery slices on a pan that is covered with parchment paper. Cook in the over for 35 minutes.
3. Meanwhile melt butter on a pan and cook sliced mushrooms, adding pepper and salt (optional).
4. In a bowl add spinach, red onion, mushrooms and hazelnuts. Toss to combine.
5. When celery root slices are done, put them aside to cool.
6. Place celery root slices on the plate close to each other. On top of them put vegetable salad and crumbled Feta cheese.
